Chicken Hawaiian salad (575 kcal)

Ingredients:

– 100 grams of pineapple pieces (frozen)
– 1 clove garlic (5 g)
– 100 grams of minced chicken
– ½ teaspoon curry powder (1 g)
– 1 ½ tablespoon (olive) oil (15 ml)
– 1 head of baby romaine lettuce
– 1 red pointed pepper
– ½ red onion
– 50 grams of corn
– 50 grams of carrot julienne
– 1 tablespoon of ketjap manis (10 ml)
– 1 tablespoon chili sauce (15 ml)
– ½ lime

Preparation:

Remove the pineapple pieces from the freezer and let them thaw on a plate.

Crush the garlic clove. Mix half the garlic with the minced chicken, curry powder and some salt and pepper in a bowl and knead together. Make small balls out of it with your (wet) hands.

Heat half the oil in a frying pan and fry the meatballs until done and golden brown on all sides for 8 minutes.

Separate the lettuce leaves from the head, wash them and shake well. Cut the lettuce into strips.

Halve the pointed pepper lengthwise, remove the seeds and cut the pointed pepper widthwise into thin strips. Cut the red onion into thin half rings. Rinse the corn in a colander with cold water and let it drain.

Place the lettuce, pointed pepper, red onion, corn, carrot julienne and pineapple pieces together in a bowl and toss to combine. Divide the chicken meatballs over the salad.

Make a dressing from the ketjap, other half of the oil, garlic, chili sauce, lime juice, some lime zest and some salt and pepper by whisking together in a small bowl.

Pour the dressing over the salad and toss everything together or serve the dressing separately on the side.
