Orzo with spinach and mushrooms with shrimp in curry coconut sauce (594 kcal)

Ingredients:

– 100 grams of cocktail shrimp (frozen)
– 1 onion
– 1 clove garlic (5 g)
– 100 grams of mushrooms
– 1 ½ tablespoon (olive) oil (15 ml)
– 70 grams of orzo
– 2 teaspoons curry powder (4 g)
– 100 grams of spinach
– 50 ml coconut milk

Preparation:

Thaw the shrimp according to the instructions on the package and pat them dry with paper towels.

Chop the onion and press the garlic clove. Cut the mushrooms into quarters.

Heat half the oil in a pan and fry half the onion and half the garlic for 2 minutes. Then add the mushrooms and fry for 4 minutes. Add the orzo and 1 teaspoon of curry to the pan and fry for a minute. Then add 350 ml of water, stir, bring to the boil and cook the orzo over medium heat for 10-11 minutes. In the last 2 minutes, stir the spinach into the orzo little by little until it has shrunk. Season the orzo with salt and pepper.

Meanwhile, heat the other half of the oil in a frying pan. Fry the other half of the onion and garlic and fry for 2 minutes. Add curry powder together with the shrimp and fry for 2 minutes. Then stir the coconut milk into the shrimp and heat it for 2 minutes until it reduces slightly.

Serve the orzo with the shrimp on a plate.
