Rice with string beans, corn & beef strips in peanut sauce (684 kcal)

Ingredients:

– 70 grams of brown rice
– 200 grams of string beans
– 50 grams of corn
– 1 spring onion
– 1 clove garlic (5 g)
– 1 tablespoon (olive) oil (10 ml)
– 100 grams of beef strips
– ½ teaspoon paprika powder (1 g)
– ½ teaspoon cumin powder (1 g)
– 1 tablespoon of ketjap manis (10 ml)
– 1 tablespoon peanut butter (20 g)

Preparation:

Cook the rice according to the instructions on the package.

Cut the string beans diagonally into squares. Rinse the corn in a colander with cold water and let it drain. Cut the spring onion into coarse pieces and press the garlic clove.

Heat the oil in a pan. Add the string beans and stir-fry until al dente for about 8 minutes. Then add the garlic, beef strips, paprika powder and cumin powder and fry for 2 minutes. Add the corn, spring onion, soy sauce, peanut butter and 3 tablespoons of water to the pan. (If necessary, add some extra water).

Stir everything and let it simmer over low heat for another 4 minutes. Season with salt and pepper.

Serve the rice with the string beans and beef strips in peanut sauce on a plate.
