Salad with broccoli, blueberries & roast beef (404 kcal)

Ingredients:

– 75 grams blueberries (frozen)
– 1 broccoli
– ½ red onion
– 4 slices of roast beef
– 40 grams of white cheese (feta)
– 1 tablespoon (olive) oil
– 1 tablespoon balsamic vinegar
– 1 teaspoon mustard
– 1 handful of mixed lettuce

Preparation:

Let the blueberries thaw. Bring a pan of plenty of water to the boil.

Cut the broccoli into florets and cook for 5 minutes until al dente. Then drain in a colander and rinse with cold water. Let drain.

In the meantime, cut the onion into thin rings. Cut the slices of roast beef into strips. Cut the feta into cubes.

Stir a dressing of the oil, vinegar and mustard in a bowl.

Divide the lettuce in a bowl and add the blueberries, broccoli, onion, roast beef and feta. Pour the dressing over the salad and toss to combine. Season with salt and pepper.
