Bibimbap with cauliflower rice (481 kcal)

Bibimbap is an originally Korean dish. It consists of warm rice with several types of vegetables. It often also includes meat and a fried egg. A super healthy pampering meal. And you can vary it to your heart's content and choose your favorite types of vegetables.

Ingredients:

– 75 grams of mushrooms
– 1 head of Shanghai bok choy
– ½ red pepper
– 1 clove garlic
– 1.5 tablespoon (olive) oil
– 100 grams of minced beef, lean
– 1 tablespoon soy sauce
– 1 teaspoon of sambal
- 1 egg
– 100 grams of cauliflower rice
– 50 grams of carrot julienne

Preparation:

Clean the mushrooms and cut into quarters. Cut a slice from the bottom of the pak choi and loosen the leaves. Cut the pak choi into strips and keep the green part aside.

Cut the red pepper into small pieces and crush the garlic clove.

Heat half the oil in a pan and fry the pepper and garlic for 2 minutes. Add the minced meat together with the soy sauce and sambal. Stir and fry for 4 minutes.

Heat the other half of the oil in a pan. Stir-fry the mushrooms together with the white part of the pak choi for 4 minutes. Then add the green bok choy and fry for another 2 minutes. Place the vegetables on a plate. Fry a fried egg in the same pan over low heat for 4 minutes until the egg white has set.

In the meantime, bring a pan of water to the boil. Add the cauliflower rice and cook for 2 minutes.

Place the minced meat on the plate with the vegetables, together with the carrot and the cauliflower rice.

Place the fried egg over it. Season everything with some salt and pepper.
