Spicy potatoes with chicken & pak choi (430 kcal)

Ingredients:

– 1 onion
– 1 clove garlic
– 200 grams of potatoes
– 100 grams of chicken fillet
– 1 tablespoon ketjap manis
– 1 teaspoon of sambal
– ½ lemon
– 2 heads of Shanghai bok choy
– 1 tablespoon (olive) oil

Preparation:

Chop the onion and finely chop the garlic clove. If necessary, halve the larger potatoes.

Cut the chicken fillet into strips. Mix the chicken fillet in a bowl with the ketkap, sambal and a tablespoon of lemon juice. Stir together and let it marinate for a while.

In the meantime, cut a slice from the bottom of the pak choi and loosen the leaves. Cut the pak choi into strips and keep the green part aside.

Heat the oil in a pan. Fry the onion and garlic for 2 minutes. Then add the potatoes and fry for 5 minutes. Then add the chicken with marinade, stir through the potatoes and fry for 4 minutes. Fry the white part of the pak choi for 3 minutes and then fry the green part for another 2 minutes. Season the stir-fry with salt and pepper.

Serve the stir-fry on a plate.
