Salad with fennel, smoked salmon & avocado (499 kcal)

Ingredients:

– 1 fennel bulb
– 1 head of baby romaine lettuce
– ½ cucumber
– ½ avocado
– 50 grams of smoked salmon
– 1 tablespoon (olive) oil (10 ml)
– ½ lemon

Preparation:

Wash the fennel, cut a slice from the bottom and cut off the stems. Cut the fennel in half, remove the hard core and cut into thin strips.

Separate the lettuce leaves from the baby romaine, wash them, shake well and cut into strips.

Cut the cucumber and avocado into slices. Cut the smoked salmon into strips.

Mix all ingredients in a bowl and drizzle the salad with the oil and a tablespoon of lemon juice. Toss together. Season with salt and pepper.
