Sweet potato salad & cheese burgers (721 kcal)

Ingredients:

– 250 grams of sweet potato
– 200 grams of green beans (frozen)
– ½ red onion
– 1 spring onion
– 2 pickles
– 100 grams of minced beef, lean
– 15 grams of grated cheese, 30+
– ½ teaspoon paprika powder (1 g)
– ½ teaspoon cumin powder (1 g)
– 1 tablespoon (olive) oil (10 ml)
– 1 tablespoon Greek yogurt (10% fat) (15 ml)
– 1 teaspoon mayonnaise (5 ml)
– ½ teaspoon mustard (5 g)
– ½ lemon

Preparation:

Peel the sweet potato and cut into equal cubes, put in a pan with plenty of boiling water and cook the potato cubes until done in about 8 to 10 minutes. Drain, rinse with cold water and let cool.

Cook the green beans until done according to the instructions on the package. Drain, rinse with cold water and let cool.

Chop the red onion very finely. Cut the spring onion into rings and the gherkin into cubes.

Mix the minced meat in a bowl with some pepper and salt, grated cheese, paprika powder, cumin and the finely chopped red onion. Form three small burgers with your (wet) hands.

Heat the oil and fry the burgers for 3 to 4 minutes per side until done.

Place the sweet potato, green beans, spring onion and gherkin together in a bowl.

In a bowl, stir together the yoghurt, mayonnaise, mustard and some lemon juice.

Stir this through the potato salad. Season the potato salad with salt and pepper.

Serve the salad on a plate together with the burgers.
