Sauerkraut stew with minced meat & pineapple (684 kcal)

Ingredients:

– 100 grams of pineapple pieces (frozen)
– 250 grams of potatoes, slightly floury
– 200 grams of sauerkraut
– 1 onion
– 1 tablespoon (olive) oil
– 125 grams of minced beef, lean
– 1 teaspoon curry powder
– 1.5 tablespoons of dairy spread

Preparation:

Let the pineapple pieces thaw on a plate.

Peel the potatoes and cut into equal pieces. Place the potatoes in a pan with plenty of water and cook for 18 minutes.

Also cook the sauerkraut in a separate pan according to the instructions on the package.

Chop the onion.

Heat the oil in a frying pan. Roast the minced meat together with the onion and curry powder until done, about 5 minutes. Add the pineapple pieces to the minced meat and heat for 2 minutes.

Drain the potatoes and sauerkraut. Mash the potatoes together with the dairy spread into a creamy puree. Stir in the sauerkraut and season with salt and pepper.

Serve the sauerkraut stew on a plate and spoon the minced meat and pineapple over it.

Tip: Spread some fresh thyme over the stew, also delicious with some raisins in the minced meat.
