Salad with roast beef rolls (423 kcal)

Ingredients:

– ½ cucumber
– 1 red pointed pepper
– ½ red onion
– 1 handful of lamb's lettuce
– 1 tablespoon (olive) oil
– 2 tablespoons dairy spread
– 1 teaspoon green pesto
– 4 slices of roast beef
– 15 grams of mixed nuts, unroasted and unsalted

Preparation:

Cut the cucumber into half slices. Cut the pointed pepper into strips. Cut the red onion into half rings. Place this in a bowl together with the lamb's lettuce. Drizzle with the oil and toss to combine.

Stir the dairy spread with the pesto in a small bowl. Spread some of the dairy spread mixture on the end of the roast beef slices and roll up the slices. Then cut the slices in half.

Divide the roast beef rolls and nuts over the salad. Season with salt and pepper.
