Greek pasta salad (731 kcal)

Ingredients:

– 75 grams of penne, whole wheat
– ½ red onion
– ¼ cucumber
– 1 red pepper
– 4 cherry tomatoes
– 4 black olives
– 50 grams of chickpeas, from a can
– 40 grams of white cheese (feta)
– 1 tablespoon mayonnaise (20 ml)
– 1 tablespoon (olive) oil (10 ml)
– ½ lemon
– ½ teaspoon mustard (5 g)
– 1 teaspoon of honey (8 g)
– ½ teaspoon oregano, dried (1 g)

Preparation:

Cook the pasta until al dente according to the instructions on the package. Then rinse with cold water and let drain.

Cut the red onion into thin half rings, the cucumber and pepper into cubes and the cherry tomatoes into quarters. Cut the olives into pieces.

Rinse the chickpeas in a colander with cold water and let drain.

Place the pasta, onion, cucumber, pepper, tomato, olives and chickpeas in a bowl. Crumble the feta over it with your hands.

Make a dressing by stirring the mayonnaise, oil, lemon juice, mustard, honey and oregano in a bowl. Pour the dressing over the salad and toss well.

Serve the salad in the bowl or on a plate. Season with salt and pepper.
