Mexican tofu bowl with potatoes (682 kcal)

Ingredients:

– 200 grams of potatoes
– 2 tablespoons (olive) oil (20 ml)
– 1 teaspoon paprika powder (2 g)
– ½ teaspoon oregano, dried (1 g)
– 1 red pepper
– 1 onion
– 50 grams of black beans
– 100 grams of tofu, natural
– 1 teaspoon cumin powder (2 g)
– 1 pinch of chili powder (1 g)
– ½ avocado
– ½ lime

Preparation:

Preheat the oven to 200°C.

Halve the potatoes. Line a baking tray with baking paper. Divide the potatoes over the baking tray. Sprinkle with ⅓ of the oil, ½ of the paprika powder, oregano and salt and pepper. Toss together. Place the baking tray in the oven and bake the potatoes for 20 minutes until golden brown and done.

Cut the pepper into strips and the onion into thin half rings. Rinse the black beans in a colander with cold water and let drain. Drain the tofu, pat dry with kitchen paper and crumble the tofu in a bowl with your hands.

Heat ⅓ of the oil in a frying pan. Add the onion and pepper to the pan together with ½ of the cumin powder and the chili powder. Bake for 5 minutes until the pepper is soft. Stir the black beans through this and heat for a minute.

Mix the tofu in the bowl with the other half of the cumin powder and paprika powder. Heat the rest of the oil in a frying pan and fry the tofu until golden brown in about 4 minutes.
Divide the potatoes, black bean mixture and tofu over a bowl.

Mash the avocado in a bowl and mix with some lime juice. Serve this over the bowl. Season with some salt, pepper and extra lime juice.
