Ciabatta tuna & cheese with cucumber and radish salad (819 kcal)

Ingredients:

– 1 ciabatta roll
– 160 grams of canned tuna, in water
– 2 spring onions
– 1 tomato
– ½ red pepper
– 1 tablespoon of mayonnaise
– 1 teaspoon mustard
– ½ lime
– 40 grams of grated cheese, 30+
– ½ cucumber
– 5 radishes
– 1 tablespoon (olive) oil

Preparation:

Preheat the oven to 220°C.

Line a baking tray or rack with baking paper.

Cut the ciabatta in half lengthwise and place the halves with the cut sides up on the baking tray. Place this in the oven for 2 minutes.

Drain the tuna well in a colander. In the meantime, cut the spring onion into rings and the tomato into slices. Finely chop the red pepper.

Mix the drained tuna in a bowl with 1/3 of the spring onion and half of the red pepper. Add the mayonnaise, mustard, 1 tablespoon of lime juice and salt and pepper to taste and stir everything together into a creamy tuna salad.

Remove the baking tray from the oven. Divide the tuna salad between the two halves. Place the tomato slices on top and sprinkle the grated cheese on top. Divide another 1/3 of the spring onion and the other half of the red pepper over the rolls. Place the baking tray back in the oven and bake the ciabatta for another 7 minutes, until the cheese has melted.

In the meantime, make the salad. Halve the cucumber and remove the seeds. Cut the cucumber into slices. Cut the radishes into thin slices. Mix this together with the remaining spring onions in a bowl. Mix with 1 tablespoon of lime juice, the olive oil and some salt and pepper.

Serve the ciabatta on a plate together with the fresh salad.
