French vegetable dish with apricots (406 kcal)

Ingredients:

– 1 eggplant
– 1 zucchini
– 1 red onion
– 2 tomatoes
- 2 cloves of garlic
– 4 apricots, dried
– 1 tablespoon (olive) oil
– 2 teaspoons oregano, dried

Preparation:

Cut the eggplant into cubes and the zucchini into half slices.

Cut the red onion into small pieces. Cut the tomatoes into cubes. Press the garlic and cut the apricots into small pieces.

Heat the oil in a frying pan. Fry the eggplant, zucchini, red onion and garlic over fairly high heat for 4 minutes. Add the diced tomatoes, apricots and oregano and reduce the heat to low.

Bake with the lid on the pan for 10 minutes (or until the vegetables are al dente).

Serve the French vegetable dish on a plate and season with salt and pepper.
