Italian stir fry with chicken & olives (288 kcal)

Ingredients:

– 100 grams of chicken fillet
– 1 eggplant
– 150 grams of mushrooms
– 1 red onion
– ½ red pepper
– 1 clove garlic
– 4 black olives
– 1 tablespoon (olive) oil
– 1 teaspoon Italian herbs, dried

Preparation:

Cut the chicken fillet into pieces and the eggplant into cubes. Clean the mushrooms and cut into quarters. Chop the red onion and finely chop the pepper and garlic. Cut the olives into slices.

Heat the oil in a large pan. Fry the onion, garlic and red pepper for a minute. Then add the chicken and fry for 3 minutes. Then add the eggplant, mushrooms and Italian herbs. Stir-fry for about 8 minutes until the vegetables are soft.

Spoon the stir-fry onto a plate, top with the olive slices and season with salt and pepper.
