Ingredients:
– 1 broccoli
– 1 portion of wok noodles
– 100 grams of chicken fillet
– 1 clove garlic
- 1 egg
– ½ teaspoon curry powder
– 20 grams of oatmeal
– 10 grams of grated coconut
– ½ teaspoon paprika powder
– 1 tablespoon (olive) oil
– 1 tablespoon ketjap manis
– 1 teaspoon of honey
Preparation:
Preheat the oven to 200°C.
Cut the broccoli into florets, place them in a pan with plenty of water, bring to the boil and cook for 5 minutes until al dente.
Also cook the noodles according to the instructions on the package.
Cut the chicken into cubes, finely chop the garlic clove and break the egg into a small bowl and beat it with a fork.
Mix the chicken in a bowl with the curry powder.
In another bowl, mix the oatmeal, coconut grater and paprika powder together with some salt and pepper.
Line a baking tray with baking paper. Dip the chicken pieces first through the bowl with egg and then through the coconut mixture. Place on the baking tray. Bake the chicken pieces in the preheated oven for 15 minutes. Turn halfway through.
Heat the oil in a wok. Fry the garlic clove for 2 minutes. Add the soy sauce and honey and heat for a minute. Stir in the drained noodles and broccoli, mix well and heat for a minute. Add some salt and pepper.
Serve the noodles with broccoli on a plate. Place the chicken pieces from the oven over it.
