Ingredients:
- 2 eggs
– 2 tablespoons semi-skimmed milk
– 1 tablespoon (olive) oil
– 50 grams of smoked salmon
– ½ lemon
– 2 tablespoons mascarpone
Preparation:
Break the eggs into a bowl. Beat the eggs with the milk and some salt and pepper with a fork.
Heat the oil in a frying pan. Pour the beaten egg mixture into the pan and fry an omelette over medium heat.
In the meantime, cut the smoked salmon into strips. Grate the zest of the lemon.
Mix the mascarpone in a bowl with 1 tablespoon of lemon juice and 0.5 teaspoon of lemon zest.
Serve the omelette on a plate. Divide the mascarpone over one half. Place the smoked salmon over this and fold the omelette in half.
