Quesadilla with chicken, spinach, mushrooms & goat cheese (571 kcal)

Ingredients:

– ½ red onion
– 100 grams of mushrooms
– 100 grams of chicken fillet
– 1 tablespoon (olive) oil (10 ml)
– 100 grams of spinach
– 2 tortilla wraps, multigrain
– 2 slices of fresh goat cheese

Preparation:

Cut the red onion into thin half rings. Clean the mushrooms and cut into small cubes. Also cut the chicken fillet into small cubes.

Heat the oil in a pan. Fry the chicken pieces for 3 minutes. Then add the mushrooms and fry over high heat for 4 minutes. Add the spinach and fry until it shrinks and all the moisture has evaporated.

Spread a goat cheese slice on both wraps. Place 1 wrap in a dry frying pan. Divide the chicken and vegetable mixture over this and also divide the red onion over it. Place the other wrap with the grease side down on top. Press a little.

Fry the quesadilla in the pan for 4 minutes until golden brown and crispy, turning carefully with a spatula halfway through.

Cut the quesadilla into quarters. Serve on a plate.
