Tortellini with minced chicken, spinach & mushrooms (818 kcal)

Ingredients:

– 80 grams of tortellini
– 100 grams of mushrooms
– 25 grams of mozzarella
– 1 tablespoon (olive) oil
– 125 grams of minced chicken
– 2 teaspoons Italian herbs, dried
– 1 tablespoon tomato puree
– 150 grams of diced tomatoes
– 1 tablespoon balsamic vinegar
– 100 grams of spinach

Preparation:

Bring a pan of water to the boil. Add the tortellini and cook for about 14 minutes.

Clean the mushrooms and cut into quarters. Cut the mozzarella into slices.

Heat the oil in a pan. Add the minced chicken to the pan together with the Italian herbs. Do this for about 4 minutes. Then add the mushrooms to the minced meat and fry for 4 minutes. Fry the tomato puree for a minute.

Stir the tomato cubes and balsamic vinegar into the pan and let it simmer over low heat for 4 minutes. Add the spinach to the pan and stir it into the sauce until it has wilted.

Stir the drained tortellini into the sauce. Season with salt and pepper.

Serve the tortellini on a plate and place the mozzarella slices on top.
