Sauerkraut stew with sweet potato & chicken strips (467 kcal)

Ingredients:

– 200 grams of sweet potato
– 250 grams of sauerkraut
– 100 grams of chicken fillet
– 1 tablespoon (olive) oil (10 ml)
– 1 teaspoon curry powder (2 g)
– ½ teaspoon mustard (5 g)
– 15 grams of raisins

Preparation:

Peel the sweet potato and cut into equal cubes. Place the potato in a pan with plenty of water, bring to the boil and cook for about 15 minutes.

Also cook the sauerkraut in a separate pan according to the instructions on the package.

In the meantime, cut the chicken into strips. Place the chicken strips in a bowl with the oil and curry and stir together.

Heat a frying pan and fry the chicken strips until done and golden brown in 5 minutes.

Drain the sweet potato and sauerkraut. Mash this together with the mustard and some salt and pepper with a masher into a coarse stew.

Serve the sauerkraut stew on a plate. Place the chicken strips on top and finally sprinkle the raisins over the dish.
