Coconut quinoa with salmon & mango-avocado salsa (881 kcal)

Ingredients:

1 salmon fillet (frozen) (approx. 125 g)
75 grams mango pieces (frozen)
70 grams of quinoa
50 ml coconut milk
½ avocado
1 red pepper
½ red onion
½ jalapeño pepper
½ lime
1 tablespoon (olive) oil (10 ml)

Preparation:

Remove the salmon from the freezer and let it thaw on a plate. Also let the mango cubes thaw in a bowl.

Put the quinoa together with the coconut milk and 200 ml water in a pan. Bring to the boil and simmer over low heat for about 10 minutes until all the liquid has been absorbed. Stir regularly and make sure it doesn't boil dry.

Cut the mango a little smaller. Cut the avocado and pepper into small cubes, chop the onion and finely chop the pepper. Mix all this together in a bowl, together with a tablespoon of lime juice, some lime zest and some salt and pepper.

Season the salmon with a little salt and pepper. Heat the oil in a pan and fry the salmon fillet for about 8 minutes until it has a crispy crust.

Serve the quinoa with the salmon and mango-avocado salsa on a plate. Sprinkle with some more lime juice.
