Orzo with spinach, tomato & smoked salmon (492 kcal)

Ingredients:

– 1 onion
– 1 clove garlic
– 100 grams of cherry tomato
– 50 grams of smoked salmon
– 1 tablespoon (olive) oil
– 70 grams of orzo
– ½ vegetable stock cube
– 100 grams of spinach

Preparation:

Chop the onion and finely chop the garlic. Halve the tomatoes and cut the smoked salmon into strips.

Heat the oil in a pan. Fry the onion for 2 minutes, add the garlic and fry for a minute. Add the orzo to the pan together with the stock cube and 350 ml of water. Stir well. Bring to the boil and then cook the orzo over medium heat for 10-11 minutes. Keep stirring occasionally until all the liquid has been absorbed.

In the last 3 minutes, stir the tomatoes into the orzo together with the spinach, a little at a time, until it has shrunk. Finally, add the smoked salmon, stir through the orzo and heat for a minute.

Serve the orzo on a (deep) plate. Season with salt and pepper.
