Spaghetti with smoked salmon, spinach & cottage cheese (646 kcal)

Ingredients:

– 75 grams of spaghetti, whole wheat
– 1 spring onion
– 200 grams of spinach
– 50 grams of smoked salmon
– 1 tablespoon (olive) oil
– 2.5 tablespoons of cottage cheese
– ½ lemon
– 40 grams of grated cheese, 30+

Preparation:

Cook the spaghetti according to the instructions on the package.

Finely chop the spring onion. Cut the spinach coarsely and the smoked salmon into strips.

Heat the oil in a pan. Fry the spring onion for a minute. Then add the spinach and fry until it shrinks. Add the salmon and fry for a minute.

Drain the spaghetti. Stir the spaghetti into the spinach together with the cottage cheese.

Sprinkle the pasta with some lemon juice. Stir everything well and heat for another minute. Season everything with salt and pepper.

Serve the spaghetti on a (deep) plate and sprinkle the grated cheese over it. Garnish with some lemon peels.

Tip: Replace the grated cheese with Parmesan cheese. Try using a different type of pasta, such as penne or tagliatelle.
