Thai salad with chicken strips & peanut dressing (384 kcal)

Ingredients:

– ¼ cucumber
– 1 red pepper
– 1 spring onion
– 75 grams of chickpeas, from a can
– 75 grams of carrot julienne
– 100 grams of smoked chicken strips
– 1 tablespoon peanut butter (20 g)
– 1 pinch of curry powder (1 g)
– 1 pinch of turmeric (1 g)
– ½ tablespoon soy sauce (5 ml)

Preparation:

Halve the cucumber and cut into half slices. Cut the pepper into cubes and the spring onion into rings.

Rinse the chickpeas with cold water and mix this together with the cucumber, pepper and spring onion in a bowl. Add the carrot julienne and the chicken strips.

Make a dressing from the peanut butter with curry powder, turmeric, soy sauce and 3 tablespoons of hot water. Add the dressing to the salad and toss to combine. Season with pepper to taste.
